Cod Blue Plate Special

Restaurant quality dish here, that’s why it gets the name of Cod Blue Plate Special.

Fixing Seafood can be done real easy or it can turn into a mess.  When I want to impress visitors this is my go to dish.  Using parchment paper makes clean up a snap.

To finish off the dish you can serve it with rice or potatoes, the choice is up to you.  And the vegetable can be what makes you the cook happy too.

Ingredients

  • 2 Pacific Cod Portion
  • 3 Lemon Slice
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tablespoon Capers
  • Parchment Paper
  • Paprika

Instructions

Place the parchment paper into the bottom of your baking dish

Next place the Cod onto the paper

Squeeze Lemon onto the portions

In a small bowl mix the Mayonnaise, cheese and the capers together

Spread the mixture over the cod

Sprinkle Paprika on top for color

Bake in a preheated oven for 20 minutes at 400 degrees F

Broil for the last few minutes.
