Need to put a spin on your Salmon this week? Salmon with Creamy Spinach could be just what your looking for.
Sure this tasty dish up wit plain white rice and grilled asparagus. With the grill still hot toss on some fresh Pineapple rings for a super finish.
- 4-6 portions of wild-caught salmon (or 1 large fillet)
- 16 oz bag fresh spinach
- 2 cups pastured coconut milk or cream
- 3 Tbsp soy sauce,
- 2 tsp dijon mustard
- 1/2 tsp ground nutmeg
- 2/3 tsp Coconut oil melted
- Himalayan Pink Salt and ground black pepper to taste
Preheat oven to 350 degrees F.
Combine all ingredients except salmon in a skillet and heat through.
Place salmon in a 9 x 13in baking dish and put a desired amount of coconut oil atop each fillet.
Pour spinach mixture on top of salmon
Bake for 20-30 minutes or until salmon is cooked through and cuts easily with a fork.
Periodically spoon the coconut/ cream mixture over the top of the spinach and salmon
