Recipe for Clear Tomato Soup
Clear Tomato Soup isn’t the most common type of tomato soup but I like it. The first place I had ever had it was at a Chinese Restaurant and I found the flavors in were fantastic. From the touch of Ginger to the Mushrooms all of the ingredients held there own.
Ingredients
- 3 cups water
- 3 Roma Tomatoes Blanched
- 3 Green onions (scallions) cut in to ¼ inch long pieces
- 1 garlic clove diced
- 1/4 tablespoon black pepper corns
- 1 pinch kosher salt
- ¼ teaspoon tomato bouillon
- 1 good size pinch dry Tarragon leaves
- 1/8 teaspoon fresh ginger
Instructions
Boil water to blanch the tomatoes
Ice bath to stop the cooking of the tomatoes
Skin, remove the seeds from the tomatoes
Dice the tomatoes
In a clean quart pot place all the ingredients
Bring to a slow boil
Simmer for 15 minutes and serve.
Although it isn’t 100% clear and how could it be with any flavors in it, this is a nice and easy soup to make when you don’t want your soup to be the main star of your meal.
