Grilled Eggplant on The Bar-B-Que
With the grilling season coming on it is time to try a few different vegetables on the grill. For today we are going to do up some eggplant. Yes we are going to take the eggplant outside and cook it up on the Bar-B-Que. Not a fancy dish that needs a lot of preparation or time to cook. Getting the grill nice and hot is the biggest task we are going to see with this dish.
- Wash your eggplant
- Eggplant sliced about 3/8 to ½ inch thick
- Coat the slices with olive oil
Get the grill ready, nice and hot
Place them on the grill but keep an eye on them
When the first side has browned flip them over.
Pull them off when the second side is browned
Serve them hot and garnish with salt and fresh parsley
