Healthy food doesn’t need to take a long time to prepare or to cook. A pork roast with greens and tomatoes, butternut squash is a great example.
Pork Shoulder Roasted with Greens and Tomatoes, Butternut Squash
Ingredients
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ lime, squeezed
- 1 ½ pounds pork shoulder boned
- 1 butternut squash cubed and skinned
- 1 cup diced tomatoes fresh
- 1 bunch of kale with the center stem removed.
- 1 1/2 cup water
Instructions
Mix all the dry ingredients in a bowl, add the lime juice. Plop the pork in a Dutch oven and coat the meat with your spice mixture. Add a cup of water.
Cover the pan and roast at 300 degs. Turn the pork about every 45 minutes or so. Do this for about 2 hours plus. Add another ½ cup of water with the butternut squash, cook for 30 minutes. Add the tomatoes and kale and cook for 15 minutes more. There you are serve it up!
