Watermelon Salad with Honey and Mint

Summer time is hear and it is watermelon time!

You will be surprised how many people will enjoy your watermelon salad with honey and mint for a great tasting summer salad.   I like using the mint that I have grown in my garden for that extra freshness and bragging rights that you grew it.  I prefer using honey over granulated sugar, it adds  depth to the taste of the mixture.  As far as the lime go’es you don’t need to over do it when you first make the salad, you can always add a touch to the mixture if you find that it is needed.

Ingredients

  • 6 cups cubed seedless watermelon
  • 2 tablespoons minced fresh mint
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons honey

Instructions

Place watermelon and mint in a large bowl. In a small bowl, whisk lemon juice, oil and honey until sugar is dissolved. Drizzle over salad; toss gently to combine. Serve chilled
