Ingredients

  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ lime, squeezed
  • 1 ½ pounds pork shoulder boned
  • 1 butternut squash cubed and skinned
  • 1 cup diced tomatoes fresh
  • 1 bunch of kale with the center stem removed.
  • 1 1/2 cup water

Instructions

Mix all the dry ingredients in a bowl, add the lime juice. Plop the pork in a Dutch oven and coat the meat with your spice mixture. Add a cup of water.

Cover the pan and roast at 300 degs. Turn the pork about every 45 minutes or so. Do this for about 2 hours plus. Add another ½ cup of water with the butternut squash, cook for 30 minutes. Add the tomatoes and kale and cook for 15 minutes more. There you are serve it up!
