Citrus Chicken Hot Off the Bar-B-Que

Citrus Chicken Oh what a dish.

Not a lot to this dish but it turns out great citrus chicken the flavor is very nice.  Kind of nice not having to do a lot of prep work for a dinner that is a winner.

Tonight we made it super simple by serving French cut green beans and Peruvian Style Chimichurri Rice with vegetables from Trader Joe’s.

Take the chicken and put thin slices of Orange, Lemon and Lime on top of the chicken and place it back in the refrigerator for a few hours.

Take the chicken out of the fridge and let it warm up a little.  We’re talking about 15 to 45 minutes.  Real cold meats dry out on the grill and there is a reason for it.

Ingredients

  • 4 chicken thighs
  • 1 orange sliced
  • 1 lemon slices
  • 1 lime sliced
  • ½ cup BBQ sauce your favorite

Instructions

Place the sliced fruit on top of the chicken in an oven proof pan

Let marinate for 2 hours

Get your grill ready nice and hot

Put a little olive oil on the grating to keep the chicken from sticking

Place the chicken on the grate and place a few slices of the orange, lemon and lime on top of the chicken

Cook for 10 minutes and flip the chicken over, place the fruit back on the chicken

After another 10 minutes remove the fruit and baste the chicken with your BBQ sauce

After cooking for a few minutes check for done
