Butternut Squash Soup

Great soup for Fall and Winter.

The ease of Butternut Soup!

Butternut Soup not a hard soup to put together, doesn’t require a lot of time or experience either.

What will you need:

Butternut Squash ( main ingredient) 2 to 3 pounds of cut and peeled

2 table spoons of  butter.  I use the salted stuff.  Heck you add salt to it anyway.

1 chopped onion, medium size works well

Chicken stock about 6 cups

Nutmeg

Salt and black pepper.

 

Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes.

Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes.

Remove squash chunks with slotted spoon and place in a blender and puree.

Return blended squash to pot.

Stir and season with nutmeg, salt, and pepper.

 

Short on time you can get the squash pre cut as well as the onion!

Easy soup with pre cut squash

With this soup you can add or remove extras in a snap.  Add some coconut  or apple for a different taste.
